Programs after age 21

Is anyone familiar with a model program for adults with CP/MR that may be similar to the Alzheimer's Day Programs? I am looking for a place for her to go during the day that will provide a stimulating environment once she has to leave school when she is 21. I am not looking for a sheltered workshop and I don't want her sitting at home all day with an aide doing nothing. Are there any model programs that people are aware of? Several other moms and I want to start something like this in our area. Thanks for your help.
